Ingredients
- 2 tablespoons extra virgin olive oil
- 2 tablespoons sweet chilli sauce
- 2 tablespoons lime juice
- 4-6 cups diced watermelon (2cm cubes)
- 1 fresh jalapeno chilli, sliced
- Fresh coriander leaves, for garnish
Method
STEP 1Combine oil, sweet chilli sauce and lime juice to make a dressing.
STEP 2
Toss thawed I&J Prawns in half of the dressing and cook following packet directions.
STEP 3
Arrange watermelon, jalapeno and cooked prawns on a serving platter and drizzle with remaining dressing. Garnish with coriander and serve.
Tips
Substitute jalapenos for green capsicum for a less spicy version.
