Fish With Mexican Mango Salsa

Oven baked I&J Fish served topped with a colourful crunchy mango salsa.

Ingredients

  • 425g packet frozen I&J Original Crumb Fish Fillets
  • Baby cos lettuce leaves, for serving
Salsa:
  • 1 mango, finely chopped
  • ½ cup finely chopped cucumber
  • 1 tablespoon finely chopped red capsicum
  • 2 spring onions, finely sliced
  • 1 tablespoon chopped fresh chives
  • Squeeze lemon juice

Method

STEP 1
Cook desired amount of frozen I&J Fish following packet directions.
STEP 2
To make the salsa, gently toss ingredients together. Serve fish with mango salsa and cos lettuce leaves.
Tips
Chopped fresh coriander can be a substitute for chives.
